The crop should be harvested at peak maturity . The early maturing varieties should be harvested first, followed by the mid varieties and late varieties. The ratoon and the automn planted crop mature earlier and, as such, they should be harvasted in the begining of the crushing season the crop matures within 10 - 12 months in punjab. The crop should be harvested when brix value reaches to 17 or 18. The following symptoms should be observed for judging crop maturity:

1). Leaves become yellow

2). Plants stop growing and arrows come out.

3). Cane become brittle and break easily at node.

4). Canes produces metallic sounds.

5).The buds swell out at nodes.

6). The eye start sprouting
